{SAVORY SANDWICHES}

This sandwich spread is so good and kind of fills the slot of tuna fish sandwiches, but without the fishiness.

1 15-oz. can garbanzo beans, drained and rinsed
1/2 c. finely chopped celery
1/4 c. finely chopped sweet onion
1/4 c. finely chopped green onion
2 T. sweet or dill pickle relish
1 T. lemon juice
1/4 c. fat-free mayonnaise
8 slices whole wheat bread
lettuce
tomatoes
mustard

  • Mash beans with bean masher.

  • Place in bowl and add celery, onions, relish, lemon juice, and mayonnaise.

  • Mix well.

  • Chill to blend flavors.

  • Serve with lettuce, tomatoes, and mustard. 

  • *Note: I chop the celery, onions, and green onions in the food processor so they get really small. The kids like it better that way. We also put avocados on them.
