{BRUSCHETTA}

This is just a basic bruschetta recipe, but it's the one we've used for a long time and it always turns out delicious. We serve it with lightly toasted whole wheat french bread.

2 to 3 c. diced fresh tomatoes
2 t. garlic, minced (about 4 cloves)
1/4 to 1/2 c. fresh basil (1/8 c. if using dried)
1/4 t. salt
1/8 t. pepper
balsamic vinegar to taste (optional)

Just have to say that I am loving your blog- I feed my family the same way and am always looking for healthy vegan recipes. By the Way, we just learned how to make our own ketchup- here's the recipe

Rebekah was in my ward in Utah and that's how I found the site. Thank you for the awesome posts! This one is especially nice because it's hard to find exact proportions with many online bruchetta recipes. PLUS the whole wheat french bread - YUM!
