3 carrots, chopped
3 celery stalks, chopped
1 c. chopped onion
1 T. vegetable broth powder
3 heads of broccoli, chopped
1 medium carrot, chopped
1 medium potato, diced
1 c. water
1 c. soymilk
9 oz. soft tofu
2 T. lemon juice
1 T. butter buds
1/3 c. raw cashews
1 T. miso
1 T. tahini (3 T. sesame seeds)
1/2 t. dijon mustard
1/3 c. nutritional yeast
1 t. salt
1/4 t. paprika
2 T. cornstarch
• Cover pot and simmer/steam until broccoli is tender, stirring occasionally.

• Put first group of ingredients (carrots, celery, onion, vegetable broth powder) in a large pot and add just enough water to cover the vegetables.
• Cover and simmer until vegetables are on the firm side of tender.
• Meanwhile, in a small saucepan, boil the carrot and potato in 1 cup of water until tender.
• Add last group of ingredients (soymilk through cornstarch) to blender (at least 5-6 cup capacity). Do not blend yet.
• When the vegetables in the large pot are firm/tender, add broccoli. There will not be enough water to cover the broccoli. Do not add water.
• When the carrots and potatoes are tender, add them, along with their boiling water, to the blender. Blend until very smooth.
• When the broccoli is tender, stir in the blended creamy cheez sauce.

Ok, me again. We made this and it was very very good. Paul had 3 bowls.
After trying 4 times, I finally got this one right. Rebekka let me try some at one point, so I knew what I was aiming for, so did my daughter (smiles). Finally, last night I scored. We served it in whole wheat bread bowls - I was so sad when I was too full not to have more. Another big favoirte of mine!

Wow! I just made this and love it! It tastes so much like real cheesy soup. I can't wait for Brian to have some. Good job Bek!
We make this a lot! It's Brian's favorite soup I make. The other day we had leftovers, but not enough for a whole dinner the next night, so I put it over brown rice and baked it for about 30 minutes at 350 and it was really yummy-- an easy broccoli cheese casserole. The only thing I would do differently next time is add even more broccoli to the casserole. Just an idea for anyone who wants a yummy casserole idea!
So amazing. Broccoli Cheese is one of my all time favorites and I have missed it so since I have given up Dairy. I will miss it no longer!! Thanks guys for all you do, keep up the great work :)
